Food acids that linger in the mouth.
When acidic foods, such as fruit juices, coffee, vinegar, chewable vitamin C, or carbonated drinks (soda pop), are eaten, if the mouth is not quickly rinsed, the acids will literally dissolve the teeth. Tooth enamel is almost entirely composed of calcium phosphate (Ca5 (PO4)3 OH). The chemical process of the formation of enamel is called mineralization. It is a combination of calcium, phosphate, and hydroxyl ions. The reverse process is called demineralization or erosion of the enamel. It involves the breaking up of calcium phosphate into calcium, phosphate, and hydroxyl ions.

Demineralization
An acid medium will provide hydrogen ions, which will combine with hydroxyl ions and this will favor the process of demineralization. An alkaline medium will provide hydroxyl ions and will favor the process of mineralization. Saliva will provide just the kind of medium which will favor the process of mineralization both on account of its neutral or slightly alkaline character and the calcium and phosphate ions it can provide.
Fluorosis, the discoloration of teeth, is caused by an exchange of ions that takes place when food acids attack the surface enamel and leach out calcium and phosphorus from the teeth. If the calcium and phosphorus are replaced by ions of other metals such as iron, copper, etc., then discoloring and brittleness (mottling) of the enamel takes place. This is due to a lack of calcium or phosphorus in the diet.
Sugars
We should stay away from white sugar. Alfred W. McCaine, a former health commissioner, demonstrated that calcium is soluble in water in the frequency of usually one part of calcium to one thousand parts of water. When sugar, which has an affinity for calcium, is added to water, the amount of dissolved calcium is thirty-five times as much. Therefore, sugar leaches out calcium from the teeth, bones, and other sources of calcium in the body. In this way, the real culprit of tooth decay is coming from too much sugar that seeps into the blood and into the lymphatic system. A Japanese nutritionist named Dr. Katase proved that the body can accommodate a small amount of refined sugar that is transformed to glycogen by the liver. Any additional amount is absorbed into the circulation and is converted into carbonic acid. To protect the body from the corrosive action of this acid, calcium is withdrawn from the bones for neutralization. Teeth and other bones are generally prime targets in the body for the leaching of calcium due to excess sugar intake. For information, the amount of refined sugar which can be tolerated by a human being is less than 2/3 of an ounce a day for an adult. For a child weighting forty pounds, the corresponding amount would be 1/6 of an ounce. However, the actual consumption of sugar per person in America is estimated to be about 5 ounces per day. Therefore, we have a real dental catastrophe in this country.
Foods that leave an acid residue in the intestines
Fried foods, meats, and all processed and overrefined foods leave an acid residue in the intestines because they are not readily digested. This excess acidity gradually seeps into the bloodstream. The blood has a slightly alkaline pH of 7.4. When the pH of the blood dips to the acid side, the body automatically leaches out calcium from the bones to neutralize the acidity and bring back the pH to 7.4. This is often aggravated by persons who consume "junk" foods made with processed ingredients that lack fiber, such as pizzas, pies, cakes, cookies, pastas, breads, crackers, cheese and various spreads, all foods with preservatives, sodas, and liquors including beer and wine.
Dry mouth and lack of saliva
An indication of overeating and poor digestion is a dry mouth or lack of saliva. This leaves the mouth unprotected and prone to tooth decay (certain drugs also cause dry mouth).
Snacking between meals
It takes the body between three and four hours to properly digest food. If one continues to snack between meals, the body never properly digests food due to the continual influx of the snacking. Eventually the digestive power is weakened and an acid condition develops.
Improper mixing of foods at one meal
Mixing foods improperly at one meal will impair digestion and cause an acid condition. Improper food combination will lead to conditions like acid reflux and upset stomach. Eating proteins, carbohydrates, acids, and sugars at the same meal is improper food combination. Sugars and proteins together cause digestive problems and acidity. One can learn to have a carbohydrate meal separate from a protein meal. An example of a carbohydrate meal is vegetables, a suitable grain like brown rice or quinoa, salad and a baked potato; a protein meal is vegetables, a lentil or bean soup, salad, and yogurt. One can have an acid dish ( fresh fruits) or a sweet dish apart from the two main meals.
Side effects caused by fluoride
Fluoride can deteriorate connective tissues by breaking hydrogen bonds. When one uses fluoridated toothpastes and other fluoride sources like fluoridated drinking water, the gums that hold teeth in place become loose and spongy (gingivitis). Couple this with a dietary vitamin C deficiency and one develops a serious gum disease (periodontal disease).
